Pulses, everybody says: 2016! Yes, this year is the year of the pulses. Well, baking with pulses is not new for many of you. Actually more and more varieties pop up! People don’t stick with just the black bean or sweet potato brownies anymore. Not just pulses are being used in baking good, but ingredients like beets, lentils and beans are also often seen in healthy baking recipes these days.

white bean peanut butter blondiesWell, since I saw so healthy blondies coming by on Instagram, I wanted to make my own variety. That’s what I did with making “Skinny banana chickpea blondies”. But this time I decided trying to make blondies based on navy beans and peanut butter.
Therefore these blondies are very rich in protein. Also, they do not have gluten, butter, dairy or refined sugar.

These gluten-free, sugar-free and dairy-free blondies are super easy to make and not too sweet! They are very moist and cake-a-like. I hope you like them as much as I do!

Main instructions
  1. Preheat oven to 350 degrees (180 degrees celsius)
  2. Line a brownie pan with parchement paper
  3. Mix the eggs for about 5 minutes until they are very fluffy (I use my Kitchen Aid)
  4. Put all the ingredients, except the egg whisk, in a big bowl and puree & mix it with a hand blender
  5. Add this puree to the bowl with egg whisk and gently mix all the ingredients until well corporated
  6. Pour the batter in the prepared brownie pan
  7. Bake in the preheated oven for about 30-35 minutes or until it colored golden or top feels firm
  8. After baking: leave in pan for about 10-15 minutes. Then transfer to a cooling rack and let cool completely before slicing
  9. Slice the blondies in 16 squares
Optional chocolate topping
  1. Heat the coconut oil until it melts, add water, cacao powder & dark chocolate and stir until well combined
  2. Drizzle the chocolate topping on top of the blondies (I did this diagonal and used a spoon, but you can drizzle however you like!)
  3. Give the chocolate some time to harden
