Salads with spinach are one of my favorites! Fruits and nuts go really well with this veggie, so you can vary endless in making salad. Especially since there are many kinds of nuts and fruits through every season!
This salad is pure &  fresh and it is rich in protein, good fats, minerals, vitamins and anti-oxidants! The homemade fruity dressing is really a perfect finishing touch to this salad.

Summer-proof chicken pecan blueberry salad

Blueberry balsamic yogurt dressing
Instructions
  1. Cut the chicken breast in pieces and put the pieces on a skewer (add some Italian herbs to taste!)
  2. Grill the chicken skewer until golden brown and crispy
  3. Wash and dry spinach, and cut the leaves smaller with sharp knife
  4. Take a dinner plate and make a bed of spinach and put the arugula on top
  5. Put some little scoops of ricotta on top of the green bed
  6. Cut the (half) avocado in moon shaped slices (cut sideways)
  7. Roast the pecans in a (dry) pan until they turn a little darker and give a good roasted smell
  8. Add the avocado, blueberries and pecans on top of the spinach-arugula-ricotta bed
  9. Put the chicken skewers on top of the salad
  10. Now make the dressing: take a yogurt bowl and add the yogurt and blueberries. Blend this with an hand blender. Then add the vinegar and sweetener and combine with a spoon. Make to taste and add more tbsp/ tsp if neccessary.
  11. Add some dressing on top and serve the rest on the side and add more to the salad to taste
  12. Enjoy this amazingly fresh salad!
Recipe Notes

Don’t forget to add some carbs if you haven’t eaten them yet today or when you did a work-out or if you have a work-out planned! Suggestion: some whole wheat bread, whole wheat pasta or quinoa goes well with this salad. Don’t you want grains? Then you can try roasted chickpeas or soybeans and use them as croutons on the salad!
