I love to bake with apples! Apples give such a sweet, fresh, crispy, mousy, tangy and/ or fruity flavour to baked goods. Do you bake with apples often?

I bake a lot with apples, for example: Dutch apple pie, appelflappen, apple crumble or apple bread. In terms of bread; I baked several banana breads with apple in the past year, but I had never posted a recipe for this bread. Maybe because it was such a regular kind of bread for me to make and not really something special anymore. Still, since I had many people asking for the recipe, I just couldn’t ignore these requests anymore.

Like I wrote; I have made several versions of apple banana bread in my baking history, like a gluten-free, dairy-free or nut-free version. For now I will begin with a post about the whole wheat version including walnuts. This bread was one of our favorites since the nuts gave such a nice bite to the (moist) bread.

  1. Preheat oven to 350 degrees (175 degrees celsius)
  2. Put the eggs in a mixing bowl and whip them (I used my KitchenAid)
  3. In the meantime you can smash the bananas until smooth
  4. Add the mashed bananas, yogurt, maple syrup and vanilla extract in the mixing bowl and mix together with the eggs until fluffy
  5. In a separate bowl, mix the flour, baking powder, baking soda, cinnamon and salt
  6. Cut the apple into pieces, leave the skin on!
  7. Add the dry mixture to the banana-egg mixture and stir well with a spoon until combined
  8. After it is all combined add the apple chunks and gently fold into the dough (with spoon)
  9. Grease a loaf/ cake pan (I used one of 8,5″ inch) and pour batter in
  10. Spread the pieces of walnuts evenly on top and gently press them into the batter
  11. Bake in preheated oven for about 45 minutes
  12. Take it out the oven and let it cool on a rack before taking it out the pan (for about 15 minutes)
  13. Remove from pan after about 15 minutes, and then cool down further till completely cooled down
  14. Serve the apple banana walnut cake slices and have it with a cup of coffee or tea and enjoy this snack in between meals!
